Chickpeas Brown Rice Veggie Patties

Chickpeas and Brown Rice both are healthy options when it comes to eating smart. These days I am experimenting on various fusion recipes. I had a bowl of leftover brown rice from a previous night and that’s how I utilized it and made perfect delicious and healthy patties out of those.

The brown rice added to a crisp when clubbed with the chickpeas. I love to cook these patties on the stove top and not grill it. These are so soft and so easy to make.

I added loads of coriander leaves to the mixture and it tasted great. You can also add chopped bell peppers and green onions to this recipe.

Ingredients –

  • 2 cups cooked and drained chickpeas ( I used tinned chickpeas, drained and washed )
  • 1 cup cooked brown rice
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons freshly chopped parsley / coriander
  • 1/2 teaspoon of ginger garlic paste
  • Red chilli powder and gram masala to taste
  • 2 tablespoons of oil – I used olive oil

Method –

  1. Mash chickpeas and brown rice coarsely in a food processor or with a help of a masher, add in ginger garlic paste and chopped parsley.
  2. Next add in the salt, pepper and red chilli, garam masala powder. Mix it well.
  3. Apply little oil on your palms and form it into 1/2-inch-thick patties, approx 4.
  4. Heat oil in a large skillet over medium-high heat.
  5. Add patties and cook until golden brown, keep turning them gently.
  6. Once the golden crust is formed on both the sides, remove them gently on a paper towel.
  7. Serve hot with dip, chutney or use it in the wraps and burgers by adding loads of raw veggies with it.
  8. Enjoy a healthy treat.
